This is something we make A LOT! Chop 2 large zucchini, 1/2 of a red bell pepper, and 1/2 of a yellow bell pepper. Toss in Za'atar seasoning and roast in the @breville Smart Oven Air in the air fryer basket (lined with parchment paper) using the air fryer feature at 400 degrees for 15 minutes. Our fave!! #veggiesrock

Tonight we experimented substituting gluten free flour in @susanffvk's Cranberry Carrot Cake. It came out tasty and the texture seemed fine. But we might need to make 2 next time so we can see if there's a noticeable difference in texture using whole wheat vs. gluten free flour. 😀 One taster wanted more sugar, but I liked that it wasn't too sweet. #wfpbno #plantbased #veganfoodshare #whatveganseat

Oil is not a health food-it’s FAT. 17grams/Tbsp, and 120 calories! Most of us can agree that whole foods are health promoting, while processed and refined foods…not so much. Oils are one of the most processed foods around-you can tell by looking at it! It looks NOTHING like the olive, corn, soybean or animal that it originally came from! You will be amazed at how easy it is to cook without oil-I was! Simply heat a pan/skillet. Add chopped veggies like onions, peppers, mushrooms. Stir in pan frequently. If they start to stick you can add a Tbsp of water at a time. If you use garlic add it at the very end. If it gets scorchy or burnt, it is very bitter. One of my faves is to dry saute mushrooms, onions and garlic-maybe add a little Bragg’s amino’s (soy sauce) and throw those on a baked potato-so satisfying! Mm-mm! A Sunday well spent breeds a week of content. . Meal prepping has time and time again proved 100% worth it for me. I now usually wake up at 5 to go workout, then shower and drive 40-45 minutes, drop my husband off at his work, drive another 10-15 minutes and get to my work. After work I go get him, drive home, do a little housework, cook, eat, cleanup, and then go to bed. No I don't have kids but this is busy for me. If I don't have my food prepped I know that I personally will fall off track. Maybe other people can cook every day for breakfast and lunch. But I have figured out that I need to have stuff ready. On the weeks I don't get a chance to meal prep, I either eat out, eat a salty oily frozen meal, or eat a protein bar (also oily). It doesn't work for me. Find what works for you and do that. . Kay diatribe over. Here we have (for two people), 4 days of Thai tofu and vegetable (eggplant, shiitake mushroom, pepper, green bean, carrot, baby corn, onion, garlic, Thai basil) curry, black rice, and spicy tomato carrot soup. The curry and rice are for our lunches and the soup is to have for dinner with salad on the side.
