Happy Monday everyone! Busy week about to start. Yesterday I did a batch cook to cover the bases. . Black bean and butternut squash soup. . Buddha bowls: spaghetti squash w/ marinara. Fiona making SMOOTHIE ICE CREAM video - As I made my own smoothie I set aside a glass of green mixture for Fiona’s smoothie. I put a good handful of dried wild apricot and let it stay so while I finish my own. (See the other post for green mixture.) - Then Fiona takes over. Today she didn’t want smoothie, but ice cream to sooth her soar throat. - She used a banana, half avocado and the ready green mixture. I mixed it up (I advice you to do that part yourself! I’ve had to clean walls and ceiling and a bunch of utilities from letting her try alone) - Taste. Fill in glasses. MY GREEN SMOOTHIE TODAY When I pick/buy kale and spinach I mix with a small amount of water and fill jars half full with the thick green sauce. I add one banana and 2-3 tbs of whole flaxseed or chia in each jar. I sometimes grind them in my coffee grinder, but only when right before use. Then put the jars in the freezer. The pictures starts with this mixture. This particular mixture had a fresh pineapple instead of water, so I didn’t add any other fruits. When I cook white beans I always save the water. And add use it as liquid in my smoothies. (Especially nice in chocolate smoothies) After adding the white bean liquid and mixing, I set aside one big glass for Fiona’s green smoothie (today: smoothie ice cream). I barely taste a thing today. Fiona is getting better from her cold, and I have just started. I therefore decided I could go for celery stalks, red beet, kohlrabi and cabbage, as it makes me feel good, but doesn’t taste that nice together. (Later on I will make a huge cup of mountain tea with ginger and lemon for that cold!). The result of the smoothie is therefore a deep beetroot colored smoothie with a huge load of fiber, not too much sugars, and minimal amounts of oil. For my body, this is nutrition at its best. If you try this out you might be aware of that, unless you already eat a lot of these foods, you might get quite bloated. I’ve been told that means you don’t have enough of the beneficial bacterias yet. It also means you should keep feeding them with this foods and they will quickly multiply. Just start with the size of a tablespoon and increase with another tablespoon every third day. The same rule goes to beans. Start out small. If you cook a big batch like me, try freezing in ice cube trays. And add a cube a day at first, increase to two cubes, then three cubes and so on, every third day. This post probably make most of you think about farts and the fear of farting when .... My best advice is don’t stop eating these foods. You really need them. But start slow. Dinner tonight for the boys and I. Started out with onion, garlic and ginger with a bit of water in the pan. Added in a bunch of special Asian mushrooms. Added frozen veggies and rice that was cooked earlier in the rice cooker and hey presto! Dinner was ready in 5.
