It’s a summer grocery haul and I’m trying bok choy for the first time! I want more greens (and beans) in my meals and @simnettnutrition has been sharing the benefits of bok choy. It contains sulforaphane (a potent antioxidant found in this and a other cruciferous veggies), and is much lower in oxalates than spinach. In 2C lightly cooked bok choy, there’s only 40 cal yet 5g of protein! It’s also high in Vit A, B6, C & K, iron, calcium, and folate - meaning it’s time I started eating it. I can even add it to smoothies because the flavor is so light. It’s been so hot after my morning runs that eating hot oatmeal just doesn’t appeal. A smoothie bowl topped with raw oats and raw buckwheat however totally does. 🤘 The bowl is a frozen banana, frozen strawberries and cherries with added ground flax and enough almond milk to get to a thick consistency that is still need-a-spoon chewy. My work lunch from yesterday, Veggie 'Fried' Rice, featured a mix of the old and the new: Sweet corn and Green beans frozen from last gardening season, with broccoli and green onion freshly picked from this season. Original recipe by @pinchofyum with tweaks by me to make it WFPB.⁣ _____⁣ ⁣ TOMATO & ZUCCHINI SPAGHETTI WITH AVOCADO SAUCE⁣ ⁣ Sauce⁣ ⁣ 1 avocado⁣ 1/4 cup low sodium vegetable broth⁣ Juice of 1 lemon⁣ 1/2 cup fresh flat leaf parsley⁣ 3-4 green onions (green parts)⁣ 1/2 tsp sea salt (optional)⁣ 1 clove garlic⁣ Freshly ground pepper to taste⁣ ⁣ Ingredients⁣ ⁣ 3 cups organic yellow and red cherry tomatoes⁣ 2 Tbs low sodium vegetable broth⁣ 2 zucchini, spiralized⁣ 4 ounces whole wheat spaghetti⁣ ⁣ Instructions⁣ all sauce ingredients together in a food processor or blender until smooth. Set aside.⁣ ⁣ Cook spaghetti according to package directions. Drain and set aside.⁣ ⁣ Heat the cherry tomatoes in a large skillet over medium-high heat with 2 Tbs vegetable broth. It showed that people who eat meat regularly have different bacteria in their gut than those who eat a strictly plantbased diet. Their "microbiome" converts L-carnitine and choline found in meat, eggs, and seafood into a molecule called trimethylamine which is then oxidized in the liver into trimethylamine oxide. Zucchini oats may seem like a strange concept right off the bat, but let me reassure you that they are amazing! Not only are you starting off your day with a serving of whole grains, fruits, and nuts/seeds, you also add in a serving of veggies! For all you that never seem to get in your servings of veggies, I highly recommend this delicious recipe. Banana bread zucchini oats 1/2 cups oats 1 banana, mashed 1 cup water or plant milk 1 tsp cinnamon 1/4 tsp nutmeg 1tbsp flaxseed 1/2 zucchini, grated Add oats and spices to a small pot. Isaiah adores tofu but has a soy allergy. I was stoked to find soy free tofu made from hemp!!! Is there anything hemp can't do?! I "breaded" the "hempfu" in a mixture of unfortified nutritional yeast, pink salt, and pepper, and baked it on parchment. I wasn't sure if it would taste different from regular tofu, but in any case, he LOVES it!!! He ate half of it before I could get into his lunchbox. Add the dates and blend to a sticky dough like texture. In an 8 inch spring foam pan evenly press down the mixture and place it in the freezer.⠀ In a high speed blender make your filling. Once it is smooth transfer it to your cake pan and place back in the freezer.⠀ Let it stay in the freezer for 2-3 hours. ⠀ When the cake is firm take it out of the freezer and add the raspberries.⠀ Serve then or put it back in the freezer until ready to serve.
