🇯🇵🇯🇵🇯🇵 Tororo, not to be confused with Totoro 😛, is one of my favorite Japanese foods. It was described by my Italian friend as “bava” (slobber, apparently — he is not a fan). At its simplest, it consists of grated nagaimo, also known as Chinese yam, mixed with dashi (fish broth). Nagaimo has a naturally slimy texture — you have to be careful when peeling it, since it’s super slippery. Once grated, you just mix in the dashi, then pour the slimy mixture over hot rice. Many recipes include raw egg, and it’s common to sprinkle some aonori seaweed on top. Nagaimo has a pretty subtle flavor, with a faint sweetness and overtones of vanilla, while the dashi adds umami. Tororo connoisseurs may note that you can see some graininess — I didn’t have the suribachi “grinding bowl” one needs to achieve a smoother texture. Tororo is also eaten with raw tuna and as a topping to noodles.
