Took my run outside today, and instead of turning around where I planned, I decided to run for the water! Luckily, my hubs came to pick me up, bc running home would have been double the distance I planned (not that it would have been the worst)- and at least we got to hang here for a bit before our return to meal prep and brunch with friends! Meal prepped chicken, cauliflower and sweet potato for our lunches this week! Have the chicken sit in Italian dressing for 1 day. Cook chicken (10 mins in instapot). Next day I cut up chicken breast into bite sized, placed in pan with more Italian dressing, simmered for 10 minutes with snap peas and placed over brown rice. Meal prep for the week. Pic 1 Chicken Breast fresh lime, cilantro, garlic, sea salt, pepper. Let sit for 3 hours cooked on Traeger until 165. Pic 2 Chicken Sausage Suprise. CK sausage, fresh cut peppers, red onion, red potatoes sprinkled with Traeger vegetable seasoning and covered in garlic infused olive oil. So a year ago I got these little colored containers in the mail and thought, “No wonder I’ll lose weight!! These things are so tiny”. But, boy did these things change my life!!! . (And for the record, they pack a lot of food.. sometimes more than I ever would’ve put on my plate in the first place) . So often I thought I was eating healthy because I had a salad for dinner, or a green veggie on my plate. Little did I know, the portioning of even healthy food is important. . . I’ve learned butter beans and corn are actually “carbs”. . . I’ve learned there is such a thing as too much fruit. . . I’ve learned my body functions better when it is nourished with a balanced diet. . . I’ve learned this lifestyle is sustainable. . . I’ve learned you actually can have your cake (fries, ice cream, pizza, hamburger, _____) and eat it too... just not every day. . . Meal planning to me isn’t about being complicated and cooking everything on Sunday.. eating the same thing every day. For me, it’s as simple as setting time to be intentional as to what I will feed myself and my family for the coming days. It’s about washing and cutting a few veggies and fruit so that I have one less step on a hectic Wednesday! . .
