Saturday morning pancakes used to be a regular thing around here. Light, fluffy, golden, topped with melted peanut butter. ⠀ ⠀ Since becoming plant based, I’ve been on the hunt 👀 for just the right pancake recipe. I tried out a few and they just weren’t right. I played around a bit and this is what I was left with. ⠀ ⠀ Peanut butter and banana protein pancakes 🥞 ⠀ ⠀ ⬇️⬇️⬇️⠀ ⠀ 1 cup oats⠀ 1 banana ⠀ 1 cup plant based milk (I used cashew)⠀ 3 tablespoons protein powder (I used chocolate)⠀ 1 teaspoon baking powder⠀ 1/4 teaspoon baking soda⠀ 1 teaspoon cinnamon ⠀ ⠀ ⠀ Place all ingredients in blender. ⠀ Heat up a tiny bit of oil in pan (I used coconut). ⠀ You know what to do! Easy little breakfast on this first morning of vacation 😍. We’re staying in a treehouse on an island close to Charleston and, wow, I’m feeling boujee and I love it. A healthy take on Saturday morning pancakes. These were perfectly sweet and moist! One large sweet potato, one banana, a tiny bit of whole wheat flour, cinnamon and all spice. The kiddo gets hers with butter and syrup. I had mine plain with a side of yogurt and blueberries (Ev got blueberries too). Yummmm! #healthyeating #healthybreakfast #healthykidsfood #healthcoach
