declaring today Fun Friday because of these SWEET P BREAKFAST FRIES with ALMOND BUTTER YOGURT DIP! this is a fun way to switch up sweet potatoes. normally i see them in savory dishes but considering they are a SWEET potato — a sweet snack is necessary. ————————— preheat oven to 375°f and slice ends off sweet potato. slice into fry shapes and toss with about 1tbsp olive oil, @primalpalate sea salt and cinnamon. bake on one side for 15 minutes, flip, then roast for another 12-15 minutes. i love them when they get a tiny bit crispy on the outside and are soft on the inside. dip: a little vanilla yogurt + almond butter + cinnamon. 😋

Whole30 diet day 18/30 and packing my lunch with a spinach and tuna salad 🥗. Dressing is olive oil, red wine vinegar, mustard and fresh lemon 🍋. One of the best parts of following a diet like this one is just the practice in the kitchen. banana egg pancakes what a surprise 🥞 i subbed paleo pancake and waffle mix instead of coconut flour today and they were super thin so i just made giant pancakes- i’ll take it! bluebs and bacon and we’re ready for friday. happy weekend everyone! _____________________________ banana, mashed 2 eggs 3 tbsp coconut flour (today i subbed with @bobsredmill paleo pancake and waffle mix) 1 tsp cinnamon 1/2 tsp baking soda dash of vanilla pinch of sea salt 2 tbsp coconut or almond milk splash of maple syrup (optional) 1. whisk mashed banana with eggs, vanilla, maple syrup, and cinnamon. whisk in remaining ingredients until smooth. (alternatively you can throw everything in a blender until smooth). If you sub with waffle mix instead of flour, it will be thin! i just fill the entire pan with batter sort of like a crepe- it’s tough to flip but it works! 2. cook over medium heat in coconut oil or ghee on a skillet, a few minutes per side watching so that they don’t burn. optional: cover pan with a lid to help fluff up. if the batter sprays out a little when you flip, don’t worry! just use the spatula to push the batter back into a circle. 3. serve with maple syrup and your favorite fruit or flax/hemp seeds.
