Ahumar con @charbroil.ecuador 🔝 Y la carne de @lolitafernandezb Short Ribs Ingredientes: 1 pieza de costilla con tapa de asado (30cm x 20cm) 3 cucharadas de sal gruesa 4 cucharadas de paprika 3 1/2 cucharadas de ajo en polvo. 2 cucharadas de cebolla en polvo. 1 cucharada de mostaza en polvo o 1/2 cda de semillas de mostaza en polvo 1/2 cucharadas de comino 1 1/2 cucharada de pimienta negra molida gruesa. 2 cucharadas de azúcar morena Primero comenzamos limpiando nuestras costillas, retiramos la membrana que se encuentra por la parte de los huesos y con un cuchillo pequeño hacemos un corte longitudinal sobre cada hueso de costilla, para que esta se pueda desprender fácilmente después de la cocción. Ahora seguimos con el macerado de nuestras costillas cubriéndolas con nuestro adobo de especias que conseguiremos mezclando todas las especias antes nombrada, luego de esto esparcimos nuestro rub por encima y “NO FROTAMOS”, con nuestras manos hacemos presión sobre la pieza de carne para que las especias queden uniformemente esparcidas por toda la carne. Yo recomiendo inyectar la costilla con fondo de Res, hay quien inyecta con cerveza, ron o whisky, desde mi punto de vista pudieses inyectar con una proporción 3 (fondo) a 1 (cerveza o whisky) porque por lo prolongada de la cocción la carne se perfuma mucho con aromas y entonces el licor es muy invasivo. En este punto llevamos a ahumador a una temperatura de 120°C, recordamos alimentar con chips de manzano o cerezo sobre el carbón que mantendrá nuestra temperatura ideal, y recordando también tener una bandeja con agua para generar humedad debajo de la pieza que se estará ahumando. Durante cada hora de cocción debemos ir humectando con jugo de manzana y vinagre de manzana. Cercano a los 72°C la temperatura interna se va a estancar producto de la evaporación superficial de la pieza. En este momento envolvemos la pieza en papel aluminio, hidratamos con jugo de manzana y seguimos la cocción normalmente. El tiempo aprox. de 6 a 8 horas, sabremos que está en el punto ideal cuando su temperatura interna sea de 87°C. Dejamos reposar por unos 30 minutos y listo

If you are looking for the perfect weeknight meal that’s fast this is it. Now sit back, grab a glass of your favorite Chardonnay and enjoy this recipe. 🐠🐠🐠 Start with a piece of parchment paper then add a hand full of asparagus drizzled with a little EVO and @lanesbbq Qnami. Next add a filet of salmon with a little more oil and seasoning. Then a small handful of cherry tomatoes and top with sliced lemon. Finally, fold the paper over making a pocket (hopefully yours is better than mine). Preheat your @biggreenegg to 400° setup for indirect cooking with a pizza stone on the grate. When the temp is right slide the pockets on to the stone and let cook like that for 20 minutes tops.
