Paleo blueberry coffee cake 🍰. . . Ingredients: 1 & 1/4 cup blanched almond flour 1/4 cup coconut flour 2 tsp baking powder 1/4 tsp salt 2/3 cup coconut sugar 1/4 cup coconut oil, melted 2 large eggs 1/2 cup cashew milk 1 cup fresh blueberries, divided 1/4 cup mini white chocolate chips (omit if strictly paleo) Topping- 1/3 cup almond flour 2 tbsp coconut sugar 2 tbsp coconut oil, solid 2 tsp cinnamon . . 1. Preheat oven to 350F. Grease an 8x8 pan and line with parchment paper for easy removal 2. In a bowl, mix almond flour, coconut flour, baking powder, and salt 3. In a separate bowl, whisk coconut sugar, coconut oil, eggs, and cashew milk 4. Pour wet ingredients into dry ingredients. Whisk until just combined then fold in 1/2 cup blueberries 5. Scoop batter into prepared pan; set aside while you make the topping! 6. For topping- add all ingredients in a bowl and crumble together using your hands 7. Scatter topping over batter then place remaining 1/2 cup blueberries on top 8. Bake for 30-35 min, until center is set. Did ya see my stories!?? Out here switchin it UP! Cajun TUNA grain bowl!!! Quinoa loaded green goodness. #DEATS: Cook quinoa accordingly. (I used a full bag of microwaveable quinoa, easy peasy!) Broil the bok choy in 1 TBS sesame oil and salt for about 5 mins (fold the bok choy leafy parts under so they don’t dry/get burned) Add everything together and since @safecatchfoods tuna comes in a ready to eat/seasoned pocket, just throw it on top!
