Since my dad has become even more obsessed with golfing since retiring, I figured whatever dessert I would make him would have to be golf themed! Coconut Caramel Slice by @panaceas_pantry Headover to her page for loads of deliciously healthy recipes! #recipe 👇 ➕➕INGREDIENTS 50 grams flax seeds, ground into a meal 1 1/4 cups shredded coconut 1/4 cup cacao Pinch good-quality salt 6 medjool dates, pitted 2-3 Tbsp rice malt syrup . CARAMEL LAYER 2 cups medjool dates, pitted 1/2 cup hulled tahini OR peanut butter if tolerated 1/4 cup rice malt syrup 1/2 tsp good-quality salt 1/4 cup coconut condensed milk . CHOCOLATE TOP 100grams vegan dark chocolate 1 Tbsp coconut condensed milk . ⏩⏩Instructions 1. Add flax meal, coconut, cacao and salt to a high-speed food processor. Pulse until combined. Add dates and 2 Tbsp rice malt, and pulse to forma sticky base. Add more rice malt is needed. 2. Press mixture into the base of preferred cake tin (I used a 15cm square one) 3. Add all caramel ingredients to a high-speed blender, and blend until very smooth. You will need to scrape the sides at least one. 4. Pour over your base layer, smooth with a hot spoon, and set in the freezer while you make the choc top. 5. Add chocolate and coconut condensed milk to a heat-proof bowl and melt over a pop of simmering water. Once melted pour onto of caramel base. 6. Allow to set in the freezer for atlas 4 hours. To serve, remove from freezer and cake tin. Use a very hot knife to slice into desired serves. Торт Микадо Ингредиенты: Тесто: 3 яйца, 1 ст. (200-мл) сахара, 200 гр. сливочного масла 82%, 200 гр. сметаны 20%, 4-5 ст. муки, 1 ч.л. соды, щепотка соли, пачка ванильного сахара или щепотка ванилина. Крем: 400 гр. сливочного масла 82%, 2 банки вкусной варёной сгущёнки, ванилин или ванильный сахар. Коржи: Смешать сметану с содой и оставить на полчаса - час. Очень мягкое, но не растопленное масло взбить с сахаром, ванильным сахаром и солью. Продолжая взбивать, добавить по одному яйца. Получится пышная кремообразная масса. Добавить сметану с содой, немного взбить. Добавляем постепенно муку, хорошо промешивая, но не всю, оставив некоторую часть для замешивания на столе. Когда тесто приобретёт густую форму, отправить его на предварительно просеянную муку на столе и вымешивать очень аккуратно и нежно. Забивать тесто нельзя, лучше подсыпать под каждый корж муку при формировании. В моём случае торт был 24 см высотой и 17 в диаметре. Это не классический вариант подачи, но если кого устраивает Башня (кстати в переводе с японского Микадо-«высокие ворота» или «величественная стена», так что думайте), тесто вышло на 1,4 кг, коржей было 20, соответственно каждый по 70 гр. Если предполагаете классический вариант, необходимо тесто поделить на 6 частей и раскатывать на предварительно прогретом противне, максимально тонко, а также проколоть вилкой. Выпекать при 200*С, до ровного, приятного, золотистого цвета. Аккуратнее, коржи очень хрупкие. Крем: Мягкое масло взбивать до увеличения более 10 мин, для того чтобы «приглушить» вкус масла. Добавить варёную сгущёнку, ванилин, взбить до однородной консистенции. Крем получается очень нежным, похожим на крем брюле.
