A favourite Vegan comfort meal, approved by my non Vegan friends! Mouth watering deliciousness on a plate and it's incredibly easy, read on for recipe - Coconut and Cashew Curry 🥥 Ingredients (serves 4): 1/2 an onion 1/2 inch fresh ginger 1 medium sweet potato 1/2 an aubergine 1/2 head cauliflower 1/2 cup of peas 2 tbsp curry powder 1 /2 tsp cumin 1/2 tsp turmeric 1/4 tsp cayenne pepper pinch of cinnamon 1 can coconut milk 1 block extra firm tofu 1/2 cup chopped tomatoes 1/2 cup veg stock cube water 1/4 cup water Quinoa 2 cups 1/2 tsp salt To serve: Quinoa on the side. Cashew nuts and coriander sprinkled on the top Instructions: Start by adding a little bit of water to your pot on the hob, chopping and adding onions, sweet potato and ginger until the sweet potato is soft enough to stick with a fork. Boil the Quinoa and salt simultaneously in a separate pot, drain and set aside. Chop the cauliflower, aubergine, and and add them to the pot with the peas. Let them cook for 10 minutes. Stir in the spices until the veggies are coated. Next add the coconut milk, stock water, chickpeas and tomatoes. Let it simmer for 20 minutes until all the veggies are soft and your significant other walks in to find out what the delicious smells emanating from the kitchen are! Petite #recette du soir ;) Gratin de #légumes à l' #emmental #léger pour 4 personnes INGREDIENTS: 🔸 150 g de #penne 🔸1 grosse #courgette 🔸1 petite #aubergine 🔸4 #tomates 🔸1 gros #oignon 🔸3 gousses d' #ail 🔸125 g de gruyère râpé #allégé 🔸huile d'olive 🔸sel, poivre PREPARATON: Faites cuire les pennes dans une casserole d'eau bouillante salée. Egouttez en fin de cuisson et réservez. Nettoyez et coupez l'aubergine et la courgette en morceaux. Pelez et hachez l'oignon et l'ail. Faites cuire l'aubergine, la courgette et l'oignon dans un cuit-vapeur. Laissez tiédir en fin de cuisson. Nettoyez et coupez les tomates en morceaux. Préchauffez le four à 200°C. Dans un saladier, mélangez tous les légumes avec les pennes, 3 c. à soupe d'huile d'olive, du sel et du poivre. Versez le tout dans un plat allant au four. Parsemez de fromage râpé. Enfournez pendant environ 40 minutes jusqu'à ce que le fromage soit gratiné. Servez bien chaud avec une volaille ou une viande blanche maigre.
